The Bimber distillery in London was founded by whiskey lovers with the mission to produce high quality single malt whiskeys with their own character - using traditional methods that are rarely found nowadays.

The whiskey's journey begins on a farm that supplies 100% of the grain for production. This is traditionally floor malted, hand-mashed and then slowly fermented for seven days. The wooden washbacks are also handmade in their own cooperage. The pot stills are fired directly and the barrels for the whiskeys are selected by hand. And finally, the whiskey is expertly blended and bottled in the distillery.

The manual approach to whiskey production passionately combines traditional methods, specialist knowledge and an absolute commitment to quality.

The small batch bottling that we can offer you today is limited to 5.000 bottles worldwide. The whiskey matured in re-charred american oak casks, which were burned out by hand by their own barrel maker in London. The wood is caramelized by the strong "charring" process and provides the whiskey with sweet, soft and fruity aromas.
